SOL + BAJA

IT STARTED AT THE BEACH

The idea for SOL grew out of our many surf trips down the peninsula. We ate wood-grilled tacos, and fresh seafood ceviches and cocktels at roadside stands. We camped under the stars on pristine beaches, and caught fish and lobster to grill over driftwood fires. We created SOL to share the uniquely fresh, simple coastal cooking of Baja and bring you the same wonderful feeling of relaxation that we love about Baja.

INSPIRATION

TIERRA, AGUA Y SOL

Simple, quick and fresh is what Baja-style cooking is all about. We take pride in creating traditional and authentic Mexican food from scratch using the same tools and techniques used by Mexican cooks for centuries. Everything on our menu is sourced locally whenever possible, and made fresh every day, including over 24 fresh salsas.

PASSION IN EVERY SIP

The heart of SOL’s bar program is a carefully curated collection of over 100 of Mexico’s finest small-batch tequilas and mezcals, including our signature single-barrels that are unique to each location. Our collection is always growing and evolving with our travels and tastings. We’re always eager to share our passion with our guests, whether it’s a private tequila tasting with the master distiller, Wine Paired Dinners or Mixology 101 classes.

OUR SPECIALTY

MARGARITAS

We use only fresh squeezed juices and 100% blue agave tequilas and our signature margaritas are hand-muddled and shaken table-side to order. Feeling adventurous? Our Farmer’s Market margarita changes monthly. Get a taste of new drinks, like our Blueberry Basil Margarita, Blood Orange and Vanilla Margarita, and Prickly Pear and Jalapeño Margarita.

UNIQUELY OURS

SOL'S SINGLE BARREL TEQUILA

Each year we travel to the Casa Noble Distillery in the lowlands of Tequila, Mexico, where for three days we taste and balance the year’s production to choose custom barrels for every SOL in our collection, each one slightly different. We taste each tequila in a hand-made SOL margarita before making a decision. The final choices are bottled from French oak barrels, numbered and shipped to each SOL. Your SOL’s Single Barrel Tequila Margarita is a truly unique experience, one you can’t get anywhere else.
