Crunch into the Taco Celebration on October 4th at SOL

(SCOTTSDALE, Ariz.)- In 2012 alone, Americans ate a record 4.5 billion tacos. To put that into perspective, this amount of tacos is equivalent to the weight of two empire state buildings combined.

October 4th is National Taco Day. Helping celebrate the massive consumption of one of America’s favorite comfort foods, SOL Mexican Cocina in the Scottsdale Quarter is helping to reign in the celebration at the place known for the Valley’s best Baja inspired cuisine.

SOL’s Executive Chef and expert in all Baja inspired flavors, Deborah Schneider has prepared a special Chorizo and Grilled Poblano Rajas Taco with Queso Fresco and Salsa Verde for just $4.50 in honor of National Taco Day.

“It is impossible to think of what the culinary scene in Arizona would be like without the influences of Baja inspired cuisine. Our border neighbors have clearly influenced Southwest cuisine and will continue to influence it in the future. Tacos are a Mexican staple and what a better a way to represent a landmark food with a national day dedicated to tacos,” said SOL’s Exec. Chef Deb Schneider.

Chorizo and Grilled Poblano Rajas Taco with Queso Fresco and Salsa Verde recipe:

Make almost as crisp as a tostada and cook flat and open-faced like a little pizza.
Serve flat, don’t bend.
5-inch corn tortilla – buttered- cheese melted (not too much)
1 ½ oz chorizo, crumbled, hot and crisped on the plancha
1 oz queso fresco, crumbled over the tortilla
5 rajas strips
cotixa cheese
onions & cilantro
tomatillo salsa
